- Step 1: Preheat your oven to 200 °C (Ober-/Unterhitze - top/bottom heat). Line a baking sheet with parchment paper.
- Step 2: For the filling, combine Quark, sugar, vanilla sugar, pudding powder, and the pinch of salt in a medium bowl. Whisk until smooth and creamy.
- Step 3: Unroll the two rolls of puff pastry. Leave them on their original parchment paper.
- Step 4: Take one pastry sheet and spread the Quark cream generously and evenly over it, leaving a small border (about a finger's width) free around the edges.
- Step 5: Carefully lift the second pastry sheet and place it exactly on top of the cream-covered sheet. Do not press down firmly.
- Step 6: Use a sharp knife or a pizza cutter to cut the layered pastry horizontally into approximately 20 equally wide strips, about 1.5 to 2 cm wide.
- Step 7: Take each strip carefully by both ends and twist it spirally. Don't twist too tightly to avoid squeezing out the filling, but enough to create a nice twisted shape.
- Step 8: Place the twisted strips with some space between them on the prepared baking sheet.
- Step 9: In a small bowl, whisk the egg with about 1 tablespoon of milk.
- Step 10: Use a pastry brush to carefully brush each strip with the egg-milk mixture. This gives them a lovely golden-brown color and shine.
- Step 11: Bake in the preheated oven for about 20 minutes. Keep an eye on them – they are ready when they are beautifully golden brown.
- Step 12: Remove the baking sheet from the oven and let the sticks cool briefly. Optionally, dust with some powdered sugar before serving. They also taste fantastic plain!
Notes
Variations: Try other pudding flavors like chocolate, lemon, or caramel. Add a few raspberries, blueberries, or small apple pieces to the filling. Sprinkle chopped nuts or chocolate chips on the quark layer. Add a pinch of cinnamon or cardamom to the filling. Drizzle with melted chocolate or sprinkle with pearl sugar before baking.
Tips: Don't overfill; a thin, even layer of cream is easier to work with. Twist gently. Work directly on the parchment paper from the puff pastry roll. If your quark is very liquid, you can drain it briefly in a sieve, but usually, this is not necessary.
Storage: Best enjoyed fresh. Store leftovers at room temperature in an airtight container for 1-2 days. They become soft faster in the refrigerator.
