Crispy Oven-Baked Feta Rolls

These crispy oven-baked feta rolls, wrapped in golden filo pastry, are a perfect savory snack or party appetizer. Easy to make, creamy and tangy inside, and delightfully crunchy outside.

Ingredients
  

  • 200 g Feta cheese crumbled
  • 100 g Cream cheese soft
  • 1 tbsp fresh Dill chopped
  • 1 tbsp fresh Parsley chopped
  • ¼ tsp Garlic powder
  • ½ tsp black Pepper
  • 8 sheets Filo dough thawed if frozen
  • ¼ cup Olive oil for brushing
  • 1 Egg whisked, for egg wash
  • Sesame seeds for sprinkling

Method
 

  1. Step 1: Prepare the oven. Preheat your oven to 200°C (400°F) top/bottom heat. Line a baking sheet with baking paper.
  2. Step 2: Mix the Feta filling. In a mixing bowl, combine the crumbled Feta cheese, soft cream cheese, chopped dill and parsley, garlic powder, and black pepper. Mix well, preferably with a fork, until you have a creamy, uniform mixture.
  3. Step 3: Prepare the Filo dough. Carefully take one sheet of Filo dough and place it on your clean work surface. Lightly brush it with olive oil. Place the next sheet directly on top and brush again. Repeat until you have stacked four sheets on top of each other. Oiling between layers is important for crispiness.
  4. Step 4: Cut into strips. Take the stacked Filo dough package and cut it into strips with a sharp knife. The article suggests strips about 10 cm (approx. 4 inches) wide.
  5. Step 5: Form the rolls. Take a Filo dough strip. Place about one tablespoon of your Feta mixture at one end of the strip. Fold the sides of the dough over the filling and then roll the dough tightly from this end to create a small roll. The seam should be at the bottom.
  6. Step 6: Place rolls on the baking sheet. Place the finished roll with the seam side down on your prepared baking sheet. Do the same with all remaining Filo dough strips and filling. Make sure the rolls have some space between them so they can become crispy all around.
  7. Step 7: Brush & sprinkle. Whisk the egg in a small bowl. Use a brush to evenly coat the top of each roll with the egg wash. Then sprinkle some sesame seeds over the top.
  8. Step 8: Bake. Place the baking sheet in the preheated oven. Bake the rolls for about 20-25 minutes. Keep an eye on them! They are ready when they are nicely golden brown and irresistibly crispy.
  9. Step 9: Enjoy. Remove the rolls from the oven. Let them cool briefly, just for a moment, so you don't burn yourself. Then serve them warm. They are a dream!

Notes

Store leftovers in an airtight container in the refrigerator for 1-2 days. To reheat, bake briefly in the oven at about 180°C (350°F) for 5-10 minutes until crispy again. Freezing is possible before baking; thaw and bake as usual, potentially increasing bake time slightly.
