Ingredients

For the Chicken Marinade
  • 1 lb chicken breast or thighs cut into small pieces
  • 2 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic finely chopped
  • 1 tsp oregano dried
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Garlic Yogurt Sauce
  • 1 cup Greek yogurt
  • 1 clove garlic finely chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1 tbsp olive oil
  • 1/4 tsp salt or to taste
For the Bowls
  • 2 cups cooked rice or quinoa warm
  • 1/2 cup cucumber diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup Kalamata olives optional
  • 2 tbsp fresh parsley chopped, for garnish

Equipment

  • Large Bowl
  • Non-stick or Cast Iron Skillet
  • Small bowl
  • Knife

Method

  1. Step 1: In a large bowl, combine chicken pieces with olive oil, lemon juice, chopped garlic, oregano, salt, and pepper. Mix well and marinate for at least 30 minutes to let flavors meld.
  2. Step 2: Heat a non-stick or cast iron skillet over medium-high heat. Cook the marinated chicken in a single layer for 6–8 minutes, turning occasionally, until golden brown and cooked through. Remove from heat.
  3. Step 3: In a small bowl, mix Greek yogurt with finely chopped garlic, lemon juice, olive oil, and salt. Adjust seasoning to taste for the garlic yogurt sauce.
  4. Step 4: Divide warm cooked rice or quinoa into four bowls. Top each bowl with the cooked chicken, diced cucumber, halved cherry tomatoes, thinly sliced red onions, and Kalamata olives if using.
  5. Step 5: Drizzle the garlic yogurt sauce generously over each bowl and garnish with freshly chopped parsley. Serve immediately and enjoy!

Notes

Marinate the chicken overnight for extra tenderness and flavor. You can swap rice or quinoa with couscous or bulgur for variety. Add grilled vegetables or feta cheese to enhance the bowl. Store leftovers separately in airtight containers and consume within 2–3 days for best freshness.
