Preheat the oven to 200°C (400°F).
Peel and boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash them until smooth.
In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and translucent.
Add the ground meat to the skillet, cooking until browned. Season with salt, pepper, and dried herbs.
Combine the mashed potatoes with the meat mixture and stir in the grated cheese. Mix well until all ingredients are incorporated.
Roll out the puff pastry and place it into a pie dish, pressing it against the sides.
Fill the pastry with the potato and meat filling, smoothing the top with a spatula.
Cut any excess pastry from the edges and fold over to seal the pie. You can also create a decorative edge if desired.
Dot the top of the pie with small pieces of butter.
Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and crisp.
Allow to cool for a few minutes before slicing and serving. Enjoy your potato pie with a juicy filling!
