- Step 1: Gently wash the strawberries under running water and remove the green tops.
- Step 2: Select about 4-6 particularly nice, smaller strawberries and set them aside for garnishing later.
- Step 3: Place the remaining strawberries in a tall container or bowl. Use an immersion blender to finely puree the strawberries until smooth (unless you prefer some chunks).
- Step 4: Add the natural yogurt and the packet of vanilla sugar (or your chosen sweetener/vanilla alternative) to the strawberry puree. Use a spoon or whisk to mix everything very well until a wonderfully homogeneous, creamy consistency is achieved. Taste and add a spoonful of extra sugar or honey if the strawberries aren't sweet enough.
- Step 5: Pour the creamy mixture into dessert glasses, small bowls, or jars.
- Step 6: Take the strawberries you set aside. Slice, halve, or quarter them and arrange them decoratively on top of the dessert. Serve immediately, or for a slightly firmer texture, let it chill in the refrigerator for a short time before serving (add garnish just before serving).

This dessert is super flexible! You can vary the yogurt by using Greek yogurt (for extra creaminess), lower-fat yogurt, Quark, Skyr, or a vegan plant-based yogurt. It also works great with other berries like raspberries or blueberries. Instead of vanilla sugar, you can use honey, maple syrup, agave nectar, or a sugar substitute. For added texture, sprinkle granola, crushed cookies, or chopped nuts on top before serving. A pinch of lemon or lime zest, or some chopped mint leaves, adds freshness. For adults, a small splash of Prosecco or strawberry liqueur can be mixed into the puree.
Tips for Success: Use ripe strawberries for the best flavor. Always taste the mixture before filling the glasses and adjust sweetness if needed. Mix well to avoid yogurt lumps. You can prepare it a few hours ahead and let it chill, but add the garnish just before serving.
Storage: Cover the glasses with plastic wrap or a lid. It keeps well in the refrigerator for 1-2 days. Frozen strawberries can be used; thaw them completely and drain the excess water before pureeing.
