Method
- Step 1: Prepare the dough. For yeast dough, dissolve fresh yeast in lukewarm milk or water and mix with flour, butter, sugar, vanilla sugar, and a pinch of salt. Knead into a smooth dough and let it rise in a warm place for about 30 minutes until visibly enlarged. For shortcrust dough, knead flour, butter, sugar, vanilla sugar, eggs, and salt into a firm dough and chill briefly in the fridge.
- Step 2: Roll out the dough. Grease a baking pan and spread the dough evenly. A rectangular pan is recommended for easy slicing.
- Step 3: Prepare the plums. Wash thoroughly, pit them, and cut them in halves or quarters depending on size. Arrange the plum halves nicely on the dough with the skin side down.
- Step 4: Preheat the oven to 180°C (160°C fan). Bake for 40 to 50 minutes until the crust is golden brown and the plums are soft.
- Step 5: Let the cake cool slightly. Optionally dust with powdered sugar or serve with cream and vanilla ice cream for a delightful treat.
Notes
You can substitute butter with coconut oil for an exotic twist. Cinnamon, nutmeg, or cardamom add a fresh flavor. Streusel topping made from butter, sugar, and flour adds extra crunch. A few drops of almond or vanilla extract enhance the dough’s flavor. The cake keeps fresh in the fridge for up to 3 days, or can be frozen in portions for later enjoyment.
