World’s Best Plum Cake

Ingredients
  

For the Dough
  • 500 g flour for the dough, either yeast dough or shortcrust dough
  • 250 g butter or margarine for fine taste and tender consistency
  • 200 g sugar for sweetness in the dough
  • 1 packet vanilla sugar adds wonderful aroma to the cake
  • 2 pieces eggs only needed for shortcrust dough, for binding
  • 1 cube fresh yeast for the yeast dough to make it fluffy
  • 1 pinch salt to enhance flavors
For the Topping
  • 1 kg ripe juicy plums preferably sweet and sour
  • cinnamon and sugar optional, for an extra sweet and spicy crust

Method
 

  1. Step 1: Prepare the dough. For yeast dough, dissolve fresh yeast in lukewarm milk or water and mix with flour, butter, sugar, vanilla sugar, and a pinch of salt. Knead into a smooth dough and let it rise in a warm place for about 30 minutes until visibly enlarged. For shortcrust dough, knead flour, butter, sugar, vanilla sugar, eggs, and salt into a firm dough and chill briefly in the fridge.
  2. Step 2: Roll out the dough. Grease a baking pan and spread the dough evenly. A rectangular pan is recommended for easy slicing.
  3. Step 3: Prepare the plums. Wash thoroughly, pit them, and cut them in halves or quarters depending on size. Arrange the plum halves nicely on the dough with the skin side down.
  4. Step 4: Preheat the oven to 180°C (160°C fan). Bake for 40 to 50 minutes until the crust is golden brown and the plums are soft.
  5. Step 5: Let the cake cool slightly. Optionally dust with powdered sugar or serve with cream and vanilla ice cream for a delightful treat.

Notes

You can substitute butter with coconut oil for an exotic twist. Cinnamon, nutmeg, or cardamom add a fresh flavor. Streusel topping made from butter, sugar, and flour adds extra crunch. A few drops of almond or vanilla extract enhance the dough’s flavor. The cake keeps fresh in the fridge for up to 3 days, or can be frozen in portions for later enjoyment.
